For baby Paxon...

This cake was for a very special friend who is pregnant with a very special baby.
Paxon.
I could spend hours telling you about this amazing family,
about how I cry every time I read her blog
or how much of my prayer life (as well as many, many other's)
are filled with plea's for his health.
But I want to celebrate what God is doing instead!
He is moving in the hearts of his people
and bringing this amazing family closer to Him!

small victory...



over chocolate chip cookies that is.  I have always had a problem with flat cookies.  Tasty, but flat.  That is now a thing of the past!  I have consumed more cookies in the past few days than I care to count!..but I do so love them!


here is the recipe I used...enjoy!


Ingredients:
1 bag 60% Cacao Bittersweet Chocolate Chips (I prefer Ghirardelli)
3 cup(s) unsifted flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks) butter
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
2 teaspoons vanilla
1 cup chopped walnuts or pecans (optional)

Directions
Preheat oven to 375ºF. Stir flour with baking soda and salt; set aside.
In large mixer bowl, cream butter with sugar, brown sugar until fluffy. 
Add eggs 1 at a time mix well between additions, and vanilla.
Gradually blend dry mixture into creamed mixture.
Stir in nuts and chocolate chips.
Spoon dough onto ungreased cookie sheets.
Bake for 11-13 min.

Happy Birthday Bailey!

These cupcakes were for a birthday party.
Miss Bailey celebrated by ice skating so chocolate cupcakes with snowflakes went right along!

Their rockstar of a mom Heidi,  had the great idea of doing
a multi super hero birthday party for the big 5.

chocolate-mint cupcake

So as you know..or maybe you don't - I LOVE chocolate! 
And right next to that would be mint.
Chocolate mint..mmmm!
This baby here is my new favorite! 
If your following this blog you will hear me say that a lot!
I cannot help myself!  This cupcake is moist - like WOW moist.  The cake is a chocolate mint and the frosting is a light butter cream with mint.  It may sound like a lot of mint, but trust me it's not.  No mouthwash taste here!  Just a perfect balance of two amazing flavors!

cookies n cream cheese cake's

That is a mouth full!...cookies n cream cheese cake cupcakes.  But, they are an incredible mouth full at that!  We L.O.V.E these!
This is not really a cupcake in the sense that it has any real cake,
but is more of a cheese cake.
My hubby's favorite and they seem to be an overall new favorite!


I would love s'more!

My new recipe: S'mores cupcakes! 
Isaac wanted them for his birthday and so here they are. 
I have to admit I did not LOVE them.  They were very tasty though, I think warm out of the oven was really good!  I do have a few tricks up my sleeve for next time though :)  
I think my favorite part about these is a hidden layer of graham cracker crumbs, butter and brown sugar...mmm gooey goodness!

Struessel cupcakes

I typically don't fall over for this type of treat but my husband does so meet the struessel cupcake!  I love the crumbly topping drizzled with a sweet glaze, the textures together are, well, sweet...literally!

Pineapple upside down cupcakes

I L.O.V.E pineapple...so it would be correct to assume that pinapple upside down would be one of my favorites, and it is. 
This was a new recipe and boy was it great! 
The cake was super moist and full of flavor and the whip cream on top was a perfect finish!

Boston Creme Pie cupcake

Three words - Boston. Creme. Pie.  WOW! okay maybe four!

This cupcake is AH-MAZING!  Really. 
I have my favorites and this one would be at the top.
If you don't know me or anything about me - know this, I love chocolate!  As in, it is wrong how much I love chocolate!  The best thing about this cupcake is, of course, the chocolate!  Okay, technically it is a chocolate ganache but I am not a techy gal so we can just call it what it is - rich, dark, finger-lickin good - chocolate!  The vanilla creme center and the moist cake don't hurt either ;)

Kokopelli Cake

Fabulous Birthday Cake

This was the most labor intensive cake I have made to date. 
But for good reason!  It was for a dear friends birthday. 
She is a fabulous gal who loves shoes and I really wanted to capture her in all her fabulousness!  If you're trying to figure out the topper, they are shoes, not eye's as my adoring 7yr old boy would say :)  I have to admit the piping was done by my husband - he rocks!

69 Chevelle

Can you see the 69 Chevelle here?...okay, you really have to look for it! 
This was the first attempt at any car cake.  And it was tricky! 
We went for an old Chevelle because this cake was going to celebrate a car enthusiasts 69th birthday and his baby was a bright orange 69 Chevelle.

Quilted wedding cake

This cake was for a wedding.
The bride loved the idea of a quilted cake, so that's what we went with!

*tip*
When quilting a cake, use a triangle.  This will help keep it all symmetrical and even!

arrrgh!

Think 'arrrgh' like a pirate!
Well that's what we called these anyway. 
I wanted something a little special and simple for my daughter Reagan's party.  And I thought this would do just the trick!  It was super easy!  I just printed a cute r on cardstock, cut it out and used it as a stencil.  Then just sprinkled crushed oreo's and sprinkles.
